Uncut Siller is a play on the Austro Hungarian tradition of Siller (Shimmer) a not red not rose that is endlessly drinkable but not without character. Petr's is from a plot of unpruned vines allowed to grow as they are inclined. Each harvest he and his pickers negotiate their way through a tangled mass of vines to harvest perfect, small, intensely flavored grapes. Though the vinifiaction is gentle, like all of Petr's work the wine shows the tannin and nerviness of small berries. It is aged briefly in barrel a few of which contain a modest amount of positive Brett that give the final wine just a touch of ANIMALITY (Petr's word). No So2, fining or filtration. Anything less than a case will leave you yearning for more.
